It is a soft and alveolate pizza, with a classic round shape, with a well-defined and thin cornice in the central part. This type of pizza has also become a UNESCO World Heritage Site

A typical crispy pizza with a thin crust that can be made using all kinds of flour and seasoned with a wide variety of toppings.

ROMAN PIZZA.

A thin, crispy pizza whose high-hydration dough is usually prepared using the poolish or liquid biga method. Because of its fragrance, the Romans also call it “scrocchiarella”.
